BAKED VIRGINIA HAM

One item you MUST try when you visit Sheldon's Restaurant is the Baked Virginia Ham. There is a certain history that goes along with the ham we sell. If you already have our hams, please read the Ham Care web page to make the most of your purchase and enjoy it for months to come!

Back in the 1960's, Federal regulations changed and we were no longer able to purchase hams from local farmers.  The hams produced by commercial packers were not up to our standards, so Buck Sheldon decided the only way to produce a good ham was to build a smokehouse and properly age the hams to perfection.  The result has been an aging process which takes from six to nine months after the initial packers cure.  The longer aging process allows the meat to develop a darker reddish color and enhanced flavor.  In the best of hams, a series of small white specks will be present denoting the spots where the fat was replaced with salt in the curing process and the result is a salt crystal.
